A New Kind of Time

Two days into the holiday, and all I have in my fridge are carrots and apples. I'm happy with what I have. No, this isn't some new diet; it's the result of my lack of understanding of the organic market after a lifetime of shopping at the local supermarket.
Near my town, there's an organic farm, ones a week, the farmer comes to sell her produce. The lettuce leaves are crisp, packed with an intoxicating umami flavor, and the herbs smell incredible. Unlike the overflowing supermarkets, the urban farm's produce is available in small quantities, and the greens are picked to order. So, I ordered two lettuce, some herbs, and arugula and waited.
The delivery was supposed to arrive on Sunday, but nature has its own rules, so it was postponed to Monday. On Monday, one of the residents volunteered to drive to the farm, pick up the orders 2 her yard. By the time she arrived, I was deep in back-to-back Zoom
. In the morning, I got a message: "Apologies, everything was sold yesterday evening. We didn't know if you would make it, so we wanted people to receive their fresh produce on the day it was picked." They offered me a credit for my next purchase.
At first, I was disappointed, but then I realized this is how nature works-it sets the schedule. You either Adjust yourself 2 its timing or you eat carrots.
"I'm happy for you that everything sold out," I replied. "Happy holidays!"
The illusion of abundance that supermarkets sell is a result of their storage resources. Fruit picked months ago is kept in cold storage and preserved 2 ensure full shelves year-round. Sometimes, it's even picked before it's ripe and ripened artificially. In some cases, water is injected into the produce before it meets the consumer to give it a shiny, juicy appearance.
The result is shelves full of food 24/7 with a low nutritional value relative to its size and price.
So, now I have organic carrots and apples from the supermarket in my fridge. Thanks to my window garden, I also have mint and beet leaves (and mustard, , olive oil, garlic, soy sauce, and lemon—all the stores are closed until tomorrow morning!). I'm looking for recipes. Any delicious suggestions?
